It's all pretty simple stuff, but I enjoy cooking and have no taste for junk food/ready meals etc.
I find Nigel Slaters 'fast food' good for ideas. Written before he had become famous (ie on tv), its quick easy under 30 minutes and mostly assemblages rather then lots of involved preparation.
His lentil and redcuurant salad was a revelation, and is now a summer staple of ours. One tin cooked green lentils mixed with chopped red onion, redcurrants, chives (or any other green herb) olive oil, squeeze lemon. Yum.

Also has several easy ways with chicken. We like soy sauce and orange juice and honey mixed together and mixed with breasts or thighs then grill or bake. Quantities don't really matter just adjust to your taste

S wouldn't thank you for that, but I'll give a try for a healthy lunch alternative.

This evening we had homemade moussaka, S had beef mince moussaka and I had lentil moussaka. We cooked side by side, so that keep him gainfully employed too, plus the outcome was very yummy.
