Black Bean Chilli
(this is the freezer filling million tonnes of leftover version, half it if you wanna, and for the non vegetarians cut one tin of chopped tomatoes and switch in 500g mince)

2 tbsp olive oil
4 garlic cloves
2 large onions chopped finely
3 tbsp mild chilli powder
3 tbsp ground cumin
3 tbsp cider vinegar
2 tbsp brown sugar
2 x 400g cans chopped tomatoes
2 x 400g cans black beans, rinsed and drained

In a large pot, heat the olive oil and fry the garlic and onions for 5 mins until almost softened. Add the chilli powder and cumin, cook for a few mins, then add the vinegar, sugar, tomatoes and some seasoning. Cook for 10 mins.

Pour in the beans and cook for another 10 mins. Serve with rice.

We used to make big batches of stuff and freeze it, until we had a freezer full of tuppawares of soup. We couldn't remember what flavour they were and never felt like eating them... So we put them back and tried again six months later Image

Anyway, point is, Mmmm... Chilli...
Chilli is nice and easy to spot in the freezer. So is curry. I like batch cooking but I label. Just helps for when we disagree on what we want for dinner or can't be bothered cooking. Oh, and agreed, mmm chilli...
Yeah, me too. Just did a massive salad yesterday that will accompany our meals and make them up for the next few days. We have no freezer Image if we did it would be full of Booja Booja raw vegan ice cream Image but we have two fridges Image which houses our fresh!

I never see the point in cooking something if it's only going to last one day Image

the beauty of this is you can leave out the chilli powder and it still tastes good (did it accidentally once) you could do half with chilli powder and half without, this is where labelling saves my arse Image

Yeah, I'd probably cut down on the chilli for Grace, or just do two batches. We got a free bag of chillis not long ago and we made a few pizzas. Mine were the ones with thick chilli coverings Image
