and it was stunning. !!! TJ had to use lots of self restraint to eat a sensible amount and said 'Out of all the nice things you've made, this is the best yet.'
Of course there were the usual shortcuts.
I simmered the beef (casserole beef) for 90 mins then added it to the curry for 30- 45 minutes.
Used ghee fo fry the paste.
I used three stalks of lemongrass and extra garlic.
No lime leaves, just zest and juice.
Asda do a Thai curry kit with most of the oddball stuff (£1.10)
and the rice was superb too. If you fancy a curry that is spicy but not hot, I can recommend this one.
