The other day, walking round Morrisons I picked up a packet of puff pastry on offer. I looked on the back and spotted a good recipe. So off I went and bought 4 salmon fillets and a bag of spinach.
Quarter the pastry and roll out each piece until big enough to wrap the fillets.
Place some wilted spinach and chopped spring onion on the pastry.
Place the salmon on top.
Add a drop of lemon juice. Pinch of salt and pepper.
Fold and cover with the pastry.
Brush with and egg.
Bake for 20-25 mins or until pastry is golden.
Luuuurvly.

Did this with some steamed broccoli and warm potato salad.
