Frit-tit-tata (as we lovingly call it Image ) is good with asparagus too (sparrow's ar*e in our house).

And to complete the April Dafties section along with Charles (you work it out), I can't swim either.
You can always tell whats for dinner when I put it up here Image Officially its frittata unofficially its "that posh omelette micky take" have to love the stuff we say when we can't think of the word. Remotes have been "doovers" ever since my sister asked for "the thingy what changes the channel.... you know the doovery thingy"
Apple and honey cake

6oz butter
6oz sugar
6oz self raising flour
2 eggs
1 slightly over ripe medium apple, peeled, cored and thinnly sliced length ways
1 tbsp honey
1 tsp vanilla extract

Cream the butter and sugar together

Whisk in the eggs and vanilla extract

Add the flour and stir well

Pour the mix into a well greased pop bottom round tin

Layer the apple slices on top and drizzle the honey over the apple

Bake at 180oC for 25 minutes

(BTW this is the recipe that won me a prize at school.... thought I'd share!) just wish is wasn't looking like pac man but trying to stop people eating cake is asking for a knife in the ribs.


The other day, walking round Morrisons I picked up a packet of puff pastry on offer. I looked on the back and spotted a good recipe. So off I went and bought 4 salmon fillets and a bag of spinach.

Quarter the pastry and roll out each piece until big enough to wrap the fillets.
Place some wilted spinach and chopped spring onion on the pastry.
Place the salmon on top.
Add a drop of lemon juice. Pinch of salt and pepper.
Fold and cover with the pastry.
Brush with and egg.

Bake for 20-25 mins or until pastry is golden.

Tonight I'm going to attempt the pasta e fagioli that was mentioned somewhere on here.
Chocolate mousse
6oz dark chocolate
4 egg whites

Melt Chocolate

Whisk the egg whites until they form soft peaks. .

Pour the chocolate mixture into the egg whites and gently fold together

It was hot and I didn't fancy making icecream without an icecream maker Image

Bake your own dog biscuits

Cofte's favourite so far...

Chicken and cheese yummy bits

5 tbsp wholemeal flour
5 tbsp porridge oats
1 tsp chicken gravy powder
50g extra mature cheddar (finely grated)
50g Marg
2 tsp cold water

Bind the above into a dough
Roll on a floured service
Cut into doggy sized chunks

bake for 10mins at 200 degrees

I've eaten dog biscuits before. No harm done, except I keep trying to chase cyclists...
