the only problem I have (living on my own) is that I always make far too much and then have to root around for containers so that I can freeze it in portions Image Luckily the £ shop and ASDA sell sets of plastic containers that are microwavable Image

Never have that problem Susie, as Dad loves home made soup and our next door neighbours always smell the gammon boiling and their youngest son asks for some. Last time I told him to fetch a container from his mum as I am fed up giving them stuff and waiting ages to get it back, and he returned with a huge soup-pan. I felt so guilty I made a whole pan for them!xx

I love making soups and we all love eating them.

I make a great Minestrone, very good Leek and Potato, Carrot & Orange but my absolute favourite is Curried Parsnip.

Of course I also make turkey or chicken soup from a boiled up carcase and that's good too.

Melly...have you tried making soup in a slow cooker? I put every vegetable I have plus a few frozen peas, spinach and some small pasta into the slow cooker with herbs and stock and leave overnight on low....delicious. Mind you Nilla is a whizz with slow cookers too so I bet she has more ideas!

I just used to bung everything in the slow cooker and then whizz it when it was cooked, this has to be a great favourite of ours but not done in a slow cooker

Put some oil in a large deep pan, add 1 small chopped leek, a diced potato and a diced carrot fry gently for 4 mins add a finely chopped chicken fillet or you can use left over chicken, if your using raw cook till its no longer pink, pour in a pint of chicken or veg stock, half a pint of creamed tomatos (passata) and bring to the boil reduce the heat and simmer for 25 mins, add 2oz of any pasta I use curls and some diced courgette if you like it simmer for another 8 to 10 mins until pasta is tender then season and serve....yummy!

Sausage and Vegetable Soup

You'll need sausages, 2 onions, mixed veg (any frozen or fresh), some Medium to large potato's, Water, gravy mix whatever you usually use is fine, and a bit of Hot sauce or curry powder.

Peel and dice the Potato's and put in a Large pan, frozen veg can be bought already mixed and chopped so if using fresh veg chop it up chop(dice) it up and add to the pan with the potato's, fill the pan half - 3 quarters full with water and put on to heat until boiling then turn down to simmer, while the pan is boiling add sausages, (these can be frozen or fresh, no need to defrost as this will happen as they boil), add the gravy mix of your choice, leave to simmer and boil for 1 hour, add the curry powder or paste (or hot sauce) to taste, (so you know how hot it is, please don't make your soup too hot so you can't eat it). then serve and enjoy.

Depending on how big the pan is that you use, this could make enough for lots more than 2 - 4 people.

You can chop the sausages into four pieces or leave them whole.
